– 800 g of asparagus
– 2 liters of water with 2 teaspoons of salt, 1 teaspoon of sugar, 30 g of butter and 1/2 lemon( juice)
– 40 g flour
– 90 g of fat butter (40 g for sauce and 50 g for gratinate)
– 400 ml of milk
– 200 ml of liquid sweet cream
– 150 g parmesan cheese (or other cheese according to your preference) (100 g for sauce and 50 g for gratin)
– salt, pepper
– 15 thin slices of ham
Method of preparation:
Clean the asparagus very well and with great care (it’s fragile). Cut it a few centimeters from the base, NOT the TOP !
Put a large saucepan with the 2 liters of water, salt, sugar, butter and lemon juice to boil.( In this water you can add the peels, give a great flavor, and remove them when the asparagus is boiled.)
When the water boils, put the asparagus and let it boil for 10 minutes. Then remove it carefully and wipe them with a paper towel.
Put in a saucepan 50 g of butter melted. Add the flour, salt and mix well. We gradually add the milk and boil the sauce for a few minutes (to cook the flour). Take the heat and add the sour cream and parmesan.
We heat the oven to a 180 degrees.
We take each asparagus rod and wrap it in the ham.
Butter with butter a heat-resistant form (we can sprinkle some panko over). Put some of the sauce, carefully put the asparagus rods too and add the sauce then the asparagus, then the sauce again. Sprinkle the parmesan on top and bake for 20-25 minutes (until browned).
