As Lent has begun and it is sometimes difficult to find the right recipe for a Lent day, we will be presenting tasty, regional and seasonal recipes in the coming time.

Mushroom salad

A simple, tasty meal that serves as an appetizer or goes well with rice.

Ingredients:

  • one kilogram of mushrooms
  • two cloves of garlic
  • an onion
  • 200 millilitres vegetable broth
  • a bunch of parsley
  • a tablespoon of pine nuts
  • a few leaves of green salad
  • oil
  • salt
  • pepper

Preparation: 

Fry the cleaned mushrooms in a hot pan. Once the water from the mushrooms has completely evaporated, add the oil, garlic, onion, and pine nuts. When the mushrooms are brown, add the vegetable stock and let it simmer over low heat for a few minutes until most of the liquid has evaporated. Season to taste with pepper, salt, and parsley at the end.

 

Sugar-free biscuits

Our sugar-free biscuits are a simple dessert that always appeals.

Ingredients: 

  • 300 grams of wheat flour
  • three tablespoons whole cane sugar
  • 180 grams margarine or coconut oil
  • 20 grams of cocoa powder
  • 20 millilitres orange juice
  • vanilla flavouring
  • a quarter teaspoon baking soda
  • orange peel
  • a pinch of salt

Preparation: 

Divide the ingredients into two parts:

  1. Mix 150 grams of flour, half the baking soda, a tablespoon and a half of the sugar, the orange peel, the vanilla flavouring, and half the orange juice until you have a homogeneous dough.
  2. Mix 150 grams of flour, half the baking soda, a tablespoon and a half of the sugar, the orange peel, the vanilla flavouring, and half the orange juice until you have a homogeneous dough.

Sprinkle your work surface with flour and roll out both doughs evenly. Then place the light and dark dough on top of each other and press them together. Use a knife to cut the dough into a rectangle and roll it into an even roll. Cut the roll into slices about 2 cm thick and place them on a baking tray lined with baking paper. Bake the biscuits for 3o minutes at medium heat.
