A simple biscuit, with juicy cherries – do it yourself!
200 g of sugar
50 g of flour
4 tbsp oil
Vanilla sugar, salt
1kg cherries (seedless and well drained)
Whip up the egg whites at maximum speed with a little bit of salt, add the sugar and then beat the meringue hard (until it does not fall out of the bowl when we turn it over). Slowly add the egg yolk and the vanilla sugar. Then turn the blender to low and add half the amount of flour, then the oil until it mixes well and finally the rest of the flour.
Preheat the oven to 180°C and prepare a baking tray with baking tin and baking paper. Spread the dough evenly on the plate and spread the cherries on top of the dough and place in the oven. Bake the cake for 20-25 minutes (depending on the oven). When you get the cake out of the oven, sprinkle it with powdered sugar.
