And because it is summer and we all like deserts we thought to offer today a recipe for:
Cake with sour cherries
- 1kg of sour cherries cleaned and well drained
- 8 eggs
- 200 g of sugar
- 250 g flour
- 4 tablespoons of oil
- some salt
- Vanilla sugar and some lemon peel if you like
We battered the whitesfoams with a little salt, add the sugar then beat until you get a strong, glossy, dense foam. (does not fall out of the bowl if you return it). Gradually add yolks, then vanilla sugar and lemon peel. Place the mixer at low speed and gradually add half the amount of flour, then the oil and the other half of the flour.
We heat the oven at 180 ° C.
Do not get baking powder! If the egg whites are good, the cake will grow nicely and will be very fluffy!
Bake paper with a baking sheet (40x30cm), strain the dough and add the slices with the piece. Some “throw” upwards to get deeper into the dough and some lower to stay on the surface so we can have cherries all over the cake.
The cake is baked at 180 ° C for 25 minutes. When it is removed from the oven it is sprinkled with vanilla sugar or powdered sugar.
