“Clean the chicken well, and slice it in four; add salt and let it sit for an hour; add lots of butter in a clay pan and let it bubble. Coat the chicken in whey four, soak them in cold water, then coat the chicken in breadcrumbs. Place the chicken in the pan, and let it fry well on one side, then turn it on the other side to cook it similarly.
